services/horizon: Fix docker compose Files for Horizon "testnet" and Integration Tests

What

Updated docker-compose.yml and docker-compose.integration.yml

Why

The docker-compose.yml file is used by the start.sh script to start Horizon in testnet.
The core image in docker-compose.integration.yml is updated to match the one used by gh for successfully running integration tests locally.
