chore: fix Docling example (Colab env integration, typos)

Description

Minor changes, all in Docling example:

• add support for Colab secrets (for HF_TOKEN used)
• use pip install --no-warn-conflicts ... due to Colab env issues
• amend typos: text occurrences of DoclingPDFReader => DoclingReader
