Designate package maintainers for things we've had to pull into this channel

Some of the versions of software we've had to pull into this channel are lagging; we need to designate package maintainers for the various different things we've had to pull into this channel.

The first step is to develop a list of those packages. Off the top of my head, RDKit comes to mind, but I'm sure there are many others...?
