Cookbock setup fix & add missing examples to README

Motivation

The steps provided to run the examples are incorrect. Node.js doesn"t have the ability to execute typescript files directly so we can"t use node utils/get-state(since we don`t compile it to .js). The tsx dependency currently provided in the pnpm scripts build this and run the examples. Obviously, it"s better to have this dependency in the project deps than to document it and force users to install it!
