We don't use completion tracking consistently across our Moodle site, so students were getting overdue reminders even though they had submitted their assignment. Enabling completion tracking just for these tasks seems problematic as it may cause confusion to students, due to the inconsistency of use across all tasks.

Could you look at implementing a feature whereby instead of just taking completion status, this plugin looks at submission status too?

Describe alternatives you've considered (optional)
We could just enable completion status for assessment submissions, and explain to students why the completion status of a module is incomplete.

I can second the issue. It is really important to solve this one as soon as possible as it confuses the students too much.
