Hi. This is when using the "Search with Google" menu item that shows in all the Apple apps.

This is because that menu item on macOS is hard coded to use Safari. I'm not sure if Apple are going to change that, but the only way to find out is to file feedback with them. https://feedbackassistant.apple.com

Creating a Apple Shortcuts task does open the browser set as default (rather than Safari) - https://www.icloud.com/shortcuts/b34b03210ecb4fd5be1935b18ef9e2b3

Here's an Automator workflow that does the same thing, I find these more performant than Shortcuts.

Search for Selected Text.workflow.zip
