This cookbook is agnostic about Winlogbeat outputs. Just as an example, you could configure Kafka output like that:

node.default['winlogbeat']['override_config'] = {
  'winlogbeat' => {
    'registry_file' => "#{ENV['ProgramData']}\\Winlogbeat\\.winlogbeat.yml",
    'event_logs' => [
      { 'name' => 'System' },
    ],
  },
