What is the official way to upgrade?

npm update @shopify/hydrogen should work.

This only upgrades hydrogen. Is there a way to stay up to date on the changes made to the demo store?

We are currently exploring a upgrade / generate command. You can track the progress on this PR

We will also be adding a changelog / changeset for demo-store template changes in the next release.
