Add support for more Apple Healthkit data types that aren't currently supported in the capacitor plugin
This can be done by forking/extending the plugin
Some interesting data types to add: https://developer.apple.com/documentation/healthkit/data-types#Mobility

Other interesting ones-

Hearing (https://developer.apple.com/documentation/healthkit/data-types#Hearing) data also looks interesting (particularly for mental health disorders)
Heart rate events (low, high, irregular) and aFib — https://developer.apple.com/documentation/healthkit/data-types#Vital-signs
