Update Sphinx config with Google Analytics and language settings

Updated `conf.py` to enable Google Analytics and set the default language to English. Changed Git branch parsing for compatibility and updated `requirements.txt` to include the required analytics extension. Cleaned up a redundant analytics ID in the theme options.
