Adds onboarding.

• Todo: Add an approach to detecting onboarding needs to happen in the versions endpoint
• Add an endpoint that registers the user and creates the organisation, ideally it would return a user token to log the user in the request would probably look something like
• If we are to link to getting started docs, we just need a url for them to live in
• If there's any other info we might want to gather it'd need specifying
