Set pixi-version to v0.41.1

This fixes CI, as #2052 (comment) didn't do it.

@Hofer-Julian since https://github.com/prefix-dev/pixi/releases/tag/v0.41.2 came out our CI started failing with

pixi install --locked
  /home/runner/.pixi/bin/pixi install --locked --manifest-path pixi.toml --color always
  Error: 
    × lock-file not up-to-date with the project
  
Error: The process '/home/runner/.pixi/bin/pixi' failed with exit code 1

Running locally with pixi 0.41.2 I get

pixi lock
✔ Lock-file was already up-to-date

Could this be an issue with release v0.41.2? Because going back to the previous patch release solves the problem for us.
