Share Sheet icons may be themed using IconBundles functionality built into Anemone, just like Home Screen Icons.

For theming share sheet icons, you need 1 icon for each app, with a size of at least 180x180.

Simply place the icon at IconBundles/<app bundle id/extension id>-large.png. Anemone will automatically scale your icons for each device. There is no need to include multiple copies of home screen icons for different devices.
